As diners become more comfortable with food delivery we’re seeing an acceleration of dark kitchens. In July 2020 Euromonitor estimated that there were at least 750 in the UK. That compares to 1,500 in the US, 3,500 in India and 7,500 in China. Deliveroo, Justeat Takeaway and Uber lead the way in the UK but many smaller operators are now adapting their business models to drive revenue whilst benefitting from lower operating costs.
